Yeah, it's ridiculously good for sure.  I probably do 90% of my waterfowl that way now, I only eat a bit fresh and the rest gets cured.

I have Steve Rinella’s book. His is a dry rub. I may try that next time. A guide gave me some a few years ago using this recipe and I liked it so I used this one.

I went light on the rub they use (Rendevouse) and added a light coat of garlic powder and a heavy coat of black pepper. I like pepper. Smoked for about 5 hours at 200 until I hit the 150 internal temp.

I’m not a huge goose fan, so I have been trying to find a recipe I liked. This stuff is really good!

Post which recipe you used and how it turned out. I want to try the other recipe, but doubt I’ll get out again this year. The recipe I posted the link to was pretty good.

Thank you! I’ve probably done a thousand pounds of salmon over the last 30 years, just my first attempt at goose. I only get out a few times a year and have been looking for a way to eat it that I really liked. This is definitely it.
