Everything bagel venison backstraps

Holy crap this is so good. I wasn’t sure at first but it’s super easy and super delicious. It’s not top chef material, but it’s easy and quick.
I used the air fryer instead of the grill. 8 minutes at 400 degrees.

I have done similar but cube it up and toss it in olive oil and everything bagel seasoning. Piping hot skillet to sear the edges and devour. So dang good

That looks great. I preseasoned all mine for sous vides cooking from frozen, but next year I’m doing some bagel steaks for sure.

I went and picked up two containers of it today because of this thread and have elk backstrap thawing as I type this. Going to do what vandeman said and sear little pieces of it. Will try the Realtree recipe a different time.

I’m on a 900mg of sodium a day or less diet. This fits the bill. Looking forward to giving it a try.

I got this one on Amazon and it’s good.  It’s a 20 ounce container of it too, so I think it’ll last forever.

I have a cupboard dedicated to spices and rubs, way more than I probably need so ebs gets used but only for certain items. I am sure it is great on tons of things but I have my half dozen I dedicate it too so that it doesn't get old.  :chuckle:

I tried the OP's version (2 sections of backstrap) the night before last.  If you like "sweet", it's very good.  Doing it on the Traeger lends smoke to the flavor.  I liked it.  Little Pathfinder said he prefers the way I usually do backstrap (Montreal seasoning + rub paprika, onion powder, garlic powder, salt, pepper, sear in butter in hot cast iron, finish for 5 minutes in a 400 degree oven, rest 5 minutes, slice and serve).  Wife wouldn't touch it because of the Soy Sauce marinade (food allergies).  I thought it was a nice change of pace.  But I'm the only one in my house that gets excited for Asian food... :twocents:

I've got a strap in the freezer that is actually two years old and needs to be eaten so this recipe is gonna happen soon. I've gotten many good recipes from this site hope this one is as good as the rest. I am tempted to do it the way Vandeman does it. Seared bites with that recipe sounds awesome. Maybe put them over some jasmine rice.

You can google the recipe, it's pretty simple.  Just one suggestion, make sure your sesame and poppy seeds are not stale.  Then it's kind of gross tasting.
