I have harvested a lot of wild pigs. Most are very good old board are usually junk sausage if you can stand it. Lots of people say they ain’t worth a darn but mid sized hogs and small pigs can be very tasty. Just got to cook it done. Lots of them have worms and can carry trichinosis.
As far as javelina I’ve eaten it once. Some clients in the Texas camp shot some and I skinned them. They call them musk hogs for a reason. they hung in a cooler for a few days and I decided to make some pork taco’s. Nope won’t be eating any again and I’m not a picky game meat guy, I eat bear and other critters some turn there nose up at. Just tough and strong. Maybe a instant pot with tons of seasons a guy could choke it down. I don’t like to waste things I shoot but they go in the pile with coyotes if I am going to shoot any.
