Peach pie / cranberry pie
« on: July 24, 2022, 04:13:12 PM »
So a couple times a year I come across some high proof liquor and make a bunch of tasty adult beverages.  My go to is peach pie-most folks have had apple pie but I like peaches.  Take a gallon of white grape/peach juice, add 30 oz of peaches in heavy syrup, about 7 cinnamon sticks and let that simmer for about an hour. Let cool and add sugar to taste--I used 1 and 2/3 cups because I don't like it very sweet.  Add 32 oz of high proof booze and 32 oz of good peach schnapps.  Take a peach out of the pot, put in a quart Mason jar and fill with the concoction.  Store them in your closet and keep one chilled in the fridge.  Did a second batch today but switched it up with cranberries.  I got a gallon of white peach / cranberry juice and put on the stove.  Added a bag of frozen cranberries and simmered for about an hour.  During that time I took a handheld bullet type mixer and pulverized the berries in the juice.  I strained the pulp and add just 2/3 cup of sugar---I wanted it a little tart.  Added 32 oz high proof and 16 oz peach schnapps ( i didn't have cranberry schnapps but will next time).Took some Mason jars and covered the bottom with Craisins then filled with the juice.  Both taste really good--will be better when chilled.  Each batch makes about 7 quarts.  Take it easy on the taste testing..this stuff is dangerous.  After drinking the peach we take the fruit from the bottom of the jar and put on vanilla ice cream...WOW. Cheers all

Am I correct....no flour, shortening or butter were harmed in the making of this pie?

I did something similar once but i used one hundred proof brandy instead of the grain alcohol and schnapps. The peach turned out really good but the batch I made using rhubarb was incredible.
I beg to dream and differ from the hollow lies
