Honey on smoked fish

WFH and smoking fish today.  I have heard people brush honey on the fish before the last hour.  Does the fish end up sticky?  I imagine the rack cleanup would be a pain.

Yes and yes.  Brown sugar is another option.

I just throw my racks in the dishwasher and put foil below them to keep the smoker somewhat clean.

I always put honey on the salmon after I pull it off the smoker and it has cooled. Then put fresh black pepper on top of the honey to make it stick prior to packaging. It's amazing! If you put it on during the cooking process, it melts off

I like a maple syrup glaze myself. And yes, sticky and messy. My racks are too big for the dishwasher. I have a large plastic  bin that i soak them in with a bit of dishwasher soap, cascade mostly.  Then hit them with the small power washer.

I usually use brown sugar on top, but have used maple syrup a few times as well.
Also use maple syrup in the brine, if and when I brine.

Lemon Pepper, honey and butter melted together. Baste your smoking fish or use it to baste your  fillet on the BBQ..My favorite for fresh silvers out of the Klick.. The coho usually still have sea lice and are as good for a BBQ as you can get.

Klick. Long time ago, fished a week in the summer for steelhead with my driftboat.  No fish, but it was awesome.  Now I got a motor boat and want to fish those coho at the mouth in late October, but tooooooooo far. too busy then.

I did a couple drift boat trips during the fall...one was a 40th birthday present for my wife... Unbelievable beauty that time of year and punched out on steelhead for the smoker.
