Frozen fish recipes?

My wife got wind that the local food bank got a shipment of frozen fillets but couldn't fit them all in their freezer and couldn't find anyone who would come get them. So her and the school cook went by and grabbed a few boxes to save. The food bank literally will throw it away if they don't have room. I've seen and heard of this happening numerous places. So anyway, we ended up with lots of frozen Pacific rockfish, Atlantic Pollock and Ocean Perch fillets. I'm gonna need some different ideas on how to cook them! Thanks in advance for your ideas. Also, is it feasible to thaw them quickly in hot water and then brine and smoke them?

Krusteaz Breader and Batter, five pound box off Amazon, hands down best fry batter out there! In my opinion of course hahaha  :)

Pan fry three minutes per side in oil of your choice, I use Olive oil, and serve with potato of choice, or rice. Don't forget the tartar sauce. Have not met anyone that does not like a good fish fry!

Use cool water to defrost.  Hot/warm water will start things growing that don’t do good!  Also it will turn the meat to mush like.  If you have an air fryer start there. 

Try this:

White wine   1/2 cup
Soy sauce    1/4 cup
Same seed oil    1/2-1 teaspoon  to taste
Lemon juice   2-4 tablespoon  to taste
Marinate no more than 10 minutes

I’m a big fan of finishing sauces. One super easy one is to fry up your fish however you want then make:


Hollandaise sauce (packet of dried stuff is fine) and add at least around a tablespoon of lemon juice (or more) to the sauce, pour over your fish with a side of rice.


Chive or green onion cream sauce, made in the fry pan you fried the fish in to get all the fried bits in it.


Mango or pineapple salsa also heated up in the pan after fish is fried.


Orange glaze. Find a good orange glaze sauce for chicken wings and use it on your fish.


Find a good coconut shrimp recipe and use fish instead. The sauce I usually make with that is any kind of jam but if you have marmalade is best. Add rice vinegar, red pepper flakes, salt and pepper in a bowl until you like it (copy cat Outback recipe) dip your fish in it.

Big Caesar salad on a dinner plate with fried fish nuggets on top. Don’t forget the squeeze of lemon and fresh ground pepper on top.

You could literally go Bubba from Forest Gump with this thread. Fish sandwiches, fish tacos, fish & chips, poached fish, fish chowder, fish & rice bowl .........

One of my buddies swears by this.  I have yet to try it as i keep forgetting (i dont eat fish often)

Works best with white meat



 it is better to butterfly the really thick fillets so they are 1/2" to 3/4" thick.  Anymore and the butter won't reach into the fish.
   • Get a rolling boil of 7-up
   • Drop in the fish and leave it in until just after it changes color to white.
   • Retrieve and then toss in a medium-high skillet with a bit of butter searing on each side and serve.
The overall cooking time is mere minutes.

So like Smokeploe mentioned, do you guys have differing methods of thawing frozen fish that doesn't take very long? Like 20-30 minute thaw for a frozen fillet? I almost always eat fish right after I catch them and don't do frozen fish unless it's already breaded cod or something like that.

If u speed up thawing fish your in essence pre cooking it...I have a freezer full of fish and just take it out and let it thaw at room temperature the day of.... Or put it in the fridge the day before I want to cook it....

If u speed up thawing fish your in essence pre cooking it...I have a freezer full of fish and just take it out and let it thaw at room temperature the day of.... Or put it in the fridge the day before I want to cook it....

 :yeah: Thaw it slow . I like to let it thaw enough to pull apart and then soak in buttermilk or whole milk or hell even 2% milk overnight .

Then flower it let stand for 5-10 minutes , egg wash and breading of choice : Panko , Cornmeal . Bread crumbs etc. Or a thin beer batter . And fry!

 One recipe all the grandmas I grew up with would do is : Above first two steps  (if not fresh) then bread in instant seasoned (parsley/ onion/garlic/black pepper usually) potato flakes . Put in a fairly heavily greased (with butter or bacon fat ) baking dish and bake at 375 -400 depending on thickness . Until done . Hit on broil to crisp top if needed .

Its hard to beat with a little seasoning, sour cream chopped onion,parsley or dill then baked . A tater and some salad , dinner in 30 min .

Very versatile . You won the Palouse lottery .  :chuckle:

Thanks everyone! Tonight I did some rockfish with mayonnaise, curry, salt and pepper and a dash of paprika whipped up in a bowl. Slathered it on and threw it in oil till it flaked and then just ate it over top of rice. Quick and easy!
