Good job, nice looking cat. Couger is the other white meat, but you do need to tenderize it. A lady friend harvest one about every other year. She serves it with a Frangelico cream sauce like this.
Frangelico cream sauce
•   1 1/2 teaspoons cornstarch
•   1- cup heavy cream
•   3 - tablespoons Frangelico liqueur
•   2- tablespoons granulated sugar
•   1/2- teaspoon pure vanilla extract
•   
•   Whisk together the cornstarch and 1 teaspoon water in a smll bowl until the cornstarch is dissolved and the mixture is smooth
•   bring the cream, frangelico , and sugar to a boil in a small saucepan over medium - high heat ; stirring to dissolve the sugar..
•   remove from heat, whisk until the sauce thickens slightly, about 45 seconds.
•   cool in an ice- water bath to 40-45 degrees F.
•   add the vanilla and whisk gently to combine.
•   refrigerate in a tightly sealed plastic container until use

awesome! Heavy yellowing and gums pulled back, may be older than you think
That's what i'm hinking too.  Measure from the gum line to the ridge in the dentition of the canine in millimeters, then add one to get a pretty good estimate on age.

first confirmed cougar anyway. I am sure ive called them prior, just didnt see them. Called in several bobs. Yes, glad I got it done for the 2022 season. Happy to have my 2023 tag in my pocket. Going to try to fill that one too.
