2023 Canning

I started my canning season yesterday with 16 pints of rhubarb pie filling. It makes great pies and pastries but we use it mostly as topping for ice cream, French toast and pancakes.
I beg to dream and differ from the hollow lies

I don't grow strawberries but came into some so I wiped out the last of the rhubarb and made a bunch of strawberry / rhubarb jam and a batch of pie filling/topping.

Awesome, and here I was so proud we knocked out 19 pints of strawberry jam from this years harvest. 
My Rhubarb stands tall, we made straw/Rhub pie once and a straw/rhub cake.

Looks amazing!! Looking forward to canning a large batch of my mothers zucchini relish. Crazy how much flavor the relish adds to mac & potato salads, deviled eggs, hot dogs, hamburgers... :drool:

This so reminds me of my Dad!
He use to make Rhubarb pie filling and sauce every year. My Mom would make the pies, but no one but my Dad made the Rhubarb Pie filling and sauce. They would put up about 20 pies and still have tons of quart jars of pie filling and sauce. I just realized, since they both passed, I have not had any rhubarb pie or sauce  :o

Almost like rhubarb is the original Sweet and Sour treat!

How about a few recipes? I have a rhubarb plant that’s been here since we moved in and I always give the rhubarb away. Something other than pie would be great!
