Just saw your bull, congrats  :tup:

Happened to have moose vs elk backstraps tonight, pretty similar and both very good.

Was actually kinda disappointed the steaks and back strap are kinda tough, but have awesome flavor! Everything else is the best game meat ever!

I did a sous vide @ 135 and reverse sear, came out very tender.

Thank you, this was the best case scenario, have hauled a few animals in my day and knew that proximity to a road was best for this adventure! He was 516 hanging, so approximately 800-900 on the hoof? Just knew that dropping into a steep, deep dark canyon was not going to happen.  :)
