I love me some flat iron steaks and I’m pushing towards them being one of the most under-rated cuts on a beef. Wife is not a big fan of red meat so when she goes out of town for the weekend, the beef hits the grill

We switched to these over flank and skirt about 5 years ago. I only buy them from Blue Max butchers on Canyon road in Puyallup.
I marinate for 6 hours in a soy sauce base with orange, lime, lemon juice, coriander seed, cumin, jalapeño peppers, cayenne pepper, garlic powder, diced onions, then grill over hot charcoal till medium rare. Dice up small for tacos. Add avacado and corn salsa. Mic drop.

I had a hunting partner leave two flat irons behind when he left camp earlier this week.   

My first set two flat irons.
They won't be my last.

I packed a costco marinated tri-tip in-a-bag to elk camp.  They keep for weeks in a cooler.  Put directly on rack in covered bbq for 2.75 hours over off burner with just other burner on high.  Got back from evening hunt and it was done to perfection.

I took the flat irons out of my elk and deer this year, excited to try them. Never had flat irons of any kind before
