Salmon collars

First time trying salmon collars. Oh my, what have I been missing? Deliciousness that’s what :drool: :drool: :drool: Never throwing those away again.
Hey! I'm not a complete idiot I have parts missing. Though sometimes I wonder.

I got a buddy that throws the filleted carcass On the barbecue with a little garlic salt and olive oil all around on it barbecues for 10 minutes and stands there with a fork and picks it clean

Found some at Pike Place Market once.  Relatively inexpensive so I tried some & thought "wow" they're great & I can do that.  Been doing it ever since, bbqing the fileted spine too.  I wrap it in foil, olive oil, salt & pepper, herbs, sometimes teriyaki, sometimes garlic.  About 2 1/2 minutes on a side.

Salmon collars absolutely a keeper. MADMAX's advice also should be noted. Really tasty and I don't get as nervous filleting a larger fish because I know it will be eaten regardless.  Delicious!

Good stuff guys👍 Thought about rib cage, then thought naw.

The plain looking collars are just that. Salt pepper garlic butter and the pit boss grill. Pretty much baked. Now the fillets are $$$

After getting the fillets cut off, I like to take a spoon to the carcass and scrape the last little bit of meat off.  Makes a great salmon burger patty, fritters/cakes, etc.

I have been doing this awhile and let me tell you when you start scraping other folks filleted fish carcasses and cutting their collars off they get a little embarrassed.
