Celery powder for curing

Anybody ever use celery powder instead of using nitrates and nitrites? Does the meat last as long? Just curious

The Bearded Butchers on YouTube have used celery powder several times in their videos for curing.

Celery powder contains nitrates, it's just a different source of the same curing agent.  It allows the marketing term "uncured" since the nitrates are naturally formed. 

From everything I have read, the preservation process is identical regardless of the source of nitrates.

This. It is the exact same ingredient, and a total marketing scam.

Kind of like when you eat out and see "NO MSG" on the menu ...but notice there is "hydrolyzed vegetable protein (HVP)" listed instead.  :o

The presence of MSG in food may be difficult to detect since the terms "natural flavor," "flavoring," or "hydrolyzed vegetable protein (HVP)," all may appear on food labels to refer to MSG, according to current FDA food labeling codes. ("Hydrolyzed Vegetable Protein (HVP)" typically contains 10-30% MSG.)

I use a bunch of fresh celery boiled into my jerky marinade. it lasts a long long time. seems to be eaten up before any super long term tests could be performed though!
