I gutless bone out then gut them to get the heart, liver, tenderloins... You can get the tenderloins without gutting but it's kinda a bitch and my Dad cut himself trying on my last elk trying to hold the stomach out the way... So I just spilled the guts out and got them... I don't pack bone unless it's a femur for a girlfriends dog...

I do gutless for everything now, except I start from the belly, and skin it back toward the spine so I have the hide to act as a ground cloth of sorts.
