what about age, diet, and health?
Diet can be a factor in hemoglobin production, also you'll see more Canadian deer and high country deer in colder climates with darker horns (on averages, with exceptions). Colder climates cause in increase in hemoglobin production. Health and age I'm not sure about, but it would stand to reason an unhealthy buck might have trouble producing as much hemoglobin as a healthy buck.

Gee, and you also see more spruce in colder climates and alpine areas.
