how do you cape an animal?

I'm not an expert when it comes to caping out an animal. Almost every animal i have shot, we have been able to get out with haywire or carry out on our backs. but now that i live at college, i have a feeling i will need to learn how to cape a deer in the field. is there a way to do this while still keeping the meat clean?
