opening day success!!!! help with goose?

well to make the story short group of 3 guys took 2 hens each mixed bag widgeon teal and shoveler?! and then by some miracle we each took a canada goose!!! each 12 pounds easy... the question is what to do with it? breast it out or field dress it and rotisery it? what do you guys do with geese? seems like breasting it out wastes alot of meat?

I always did breast and legs, but I wouldn't hesitate to clean it if it's a big fat one. Congrats!

A big gander throws plenty of fat and that is a good thing....take your time and smoke or rotis over coals and do the Thanksgiving bird thing early. Stuff it. Let that fat roll into the bird...just don't go to high in temp or over cook as these birds will dry out quick. Season the outside (and inside)....a cute little device called the Turkey Rocket does wonders...the key is SLOW and watching the temp and you will eat like Royalty....which you deserve for getting out in the weather and collecting a few birds. Chukar tomorrow for me in the Whiskey Dick and beyond...good eating Goose Whacker

thanks for the help, i just breasted and legged it, next time i will field dress it, i was in a bit of a hurry, been up for almost 24 hours with about 4 hours of sleep :bdid:

Cut a pocket into the breast meat, rub with garlic, lay down a layer of fresh basil, ham (proscuitto), next a layer of bread crumbs and parmesan cheese, then more basil.  Wrap with bacon, bake, slice.  Serve with Blackberry-merlot sauce.   No time to post tonight, will try to do it tomorrow.

Cut the breast into steaks and marinate in Italian dressing, wrap with bacon held on with skewers and barbeque.  The women dig it.
