I always do my own. I recomend learning how to process your meats. you can make all of your own product. summer sausage, jerky, burger, steaks, roasts, this way you know everything about your meats and what is in it. I find it satisfying to make all my own meat products.

If you can gut it, you can process it. Bare minimum you need a couple of sharp knives and a roll of butcher paper. Plenty of 'how to' info on Google. I did it with my first deer, and won't look back. Then again, I'm very DIY.
