I brought a lot of meat on my cat out, but havent eat any yet, I need to fiqure out a good recipe.  Ill let you guys know how it is when I eat some.

It's very good.  One thing to keep in mind is to make sure it is properly cooked.  Someone in Sandpoint a couple of years ago made lion jerky and took it to work and made everyone very sick with trichnosis.

Cat...  :)  Was kinda greasy though... And some parts very tough... Couldn't even chew it... Good flavor....

A Montana University did a study on trichenosis in MT. If I remember correctly 14% of bear and 47% of cougar carry it in MT. I would expect roughly the same in WA.

Just cook the meat and any jery well, and it will be some great tasing table fare for you, much like pork as everyone else stated.

A taxidermist gave me one once, excellent eating.  Grill the backstrap or whatever you would do with a high quality pork loin.  We burgered the rest, labeled fluffy burger in the freezer.  The family like it as well.

This makes me want to eat it even less than I did before. I had heard you shouldn't jerk bear since the process isn't hot enough. I never have because of that, I just turn mine into sausage and whatnot.
