Of all the game meat that we have, duck is definitely my least favorite.  At times it has been very plentiful, though, so I've worked hard to figure out what will make it taste good to me.  I can tell you from experience that duck enchiladas aren't good, but I came up with my own recipe that everyone seems to like really well.  I actually forgot about it for a while, but made it tonight with goose.  It goes something like this:

Brown duck breasts in garlic, butter, and herbs
Put duck in slow cooker
Heat lemon juice (1/2 cup?) with garlic in the pan
Add chicken stock (1 can) and one package dry onion soup
Pour in slow cooker and cook for "hours"

Later,
Saute onion, celery, and bacon pieces
slice duck
add rest of juice to the pan and thicken with flour
add duck
serve over noodles

I hope that all made sense...I call it "Kelli Duck"

That sounds oh so good. I got some snowgoose in the dehydrater making teryaki goose jerky :drool: :drool: :drool: :drool:

Take the breast and Hammer out flat,real flat.Dip in egg,then dip in flour with salt and pepper.Fry in oil till internal temp of 145-150..Make some hash browns and a few eggs over medium.
EAT UP.Best Duck fried steak.

You'll think you're eating beef chicken fried steak.  Do as Whitey mentioned above, but after pounding breasts flat....and I mean as flat as you can without breaking apart, put in large bowl and pour in double strength beef bullion already mixed to a level that all meat is submerged.  Leave in refrigerator over night.........drain and put back in a new batch of bouillon for another overnight stay.  Remove and package and freeze if desired.  Take out as needed and do as Whitey said or use any chicken fried steak recipe.  Impossible to tell it is duck.

Disclaimer..............does not work on mergansers and others that like fish. :chuckle:

My husband makes a killer jerky.  The kids take some to school and everyone asks if we have any jerky made.  We shoot alot of ducks (I don't)  and they all get put into jerky.  He  has an 8X8 smoke shop with a butcher room next to it.  We also make sausage, italian sausage and venison burger.  He's always working on a new recipe, the last was a little extra peppery by request.  My grandson (age 3) says it has to much pepper.
