have a brisket in the fridge but think i will have a New York steak tonight and a baked tator will do the brisket tomorrow

Having some people over tonight for a BBQ, we'll be having Antelope kabobs and Venison burgers. Might even break out the bear bratwursts.  :drool:

this thread is bad for Machias.. meaty tacos made with masa,,,two kinds of cheese and mango salsa,,,serreno pepper just for the fire,,,I can crap through a screen and not touch a wire.. :yike:

Friday night I made a small batch (15lbs) of Polish dogs for a family get-together this weekend.

The mix was 75% pork butt and 25% bear meat. I used the Polish sausage kit from Hi Mountain. Because it was a small batch I did not want to prep the natural hog casings so I used some 33mm collagen casings.

I also added some hi-temp mozzarella and cheddar cheese.


Finished stuffing.


I slow baked some so we would just have to reheat them on the grill.


I also cooked some up for dinner that night. I cooked them too hot and the casings split, but they tasted great.

Your making a big mistake Rasbo if you let Rick have any of that stuff especially if he stays in your tent. I am checking the prevaling wind before I decide which side of you to put my tent. He got into something last year so bring that wire.
