Got Fish? Check it out....

So I had three Chinook and a Coho in the freezer wonderin' what I was gonna do with em'.  Finally the other day I got around to canning em'.  Anybody ever Canned fish.....or even tried it?  If you have a lot of fish and want something else to do with em' this is a great way to eat it.

I actually had a camera close by a decided to take a few pics of the process I go through.

Obviously start with a whole fish......



I usually fillet em' first.  Some people will cut em' into steaks...works either way.



When I get two nice fillets I'll cut em' into strips like these.....

Once I have em' in strips I cut the skin off the backs.....



Dice em' all up into smaller chuncks like these and there ready for the pressure cooker.



I don't have any pics of em' in the pressure cooker.....usually the wife's part of the job.  :)  But here are some of the final products.  I think we got 18 jars out of this bunch.



Great for makin' Salmon patties and such or making like a Salmon Dip out of em'.  These jars will last for a long time....

Apparantly its close to lunch time, because my salivary gladns just went into overtime.  NO really, literally :drool:

Let us in on how it turned out. We canned like 12 quarts of venison this year and boy did it turn out good. Nice pictures by the way.

yea sometimes your forced to can them ol deer you shoot that don't have any teeth left!! :chuckle: Great looking fish looks like a great snack.

Great preparation job. We also can a bunch when we get a surplus of fish, especially the URB's. Steelheading tomorrow am, maybe I will get two, one to eat now, and can the other...

jar of canned salmon, crackers and maybe some cream cheese.  thats a combo that usually finds its way into the boat when i float.  it's tasty.

Not 100% sure there billy....usually the wifes doing, but I think some where between 11-12 as far as pressure for about an hour.  Depends on how many jars we can get in there.  Usually fit 16-18 jars in a cooker.

Iceman.....my steelhead fishin' is done up here for a while, gonna start heading down south from now on....save a few for others.  :)

Klick and Muleysniper got it down.....Salmon patties and Salmon dip, great things to take out on the boat or munchin' on around a fire.

I've also in the past taken a couple dozen jars with me back to Montana.....amazing how many people become your friend back there.  Didn't really have any problems finding places to hunt Antelope.  :)  Plus you have an excuse to come back the following year to get your jars.   ;)
