Deer Burger
« on: July 08, 2010, 07:52:48 PM »
My son has tried deer sausage, backstrap steak, and ground deer.  The only thing he likes is deer burgers.  He wants me to take the entire animal we shoot this fall, assuming we do, and grind it all up into deer burgers.  Is this wrong?

Some will say, "It is his deer he can do what he wants", but I have to say grinding the whole thing is wrong.
Backstrap and tenderloins should never be ground and there is always a few chunks of tender steaks if you know how to butcher.  :twocents:

i dont think its wrong at all. if thats what he wants then do it. atleast save the back straps for your self and then get the rest into burger.

Nah, its his deer, let him eat it however he wants. But I bet it wouldn't be too hard to find someone who would trade their burger for your backstraps.  :chuckle:

I will take the backstraps and tenderloins off you, for free, just think, no cost of making it into burger!   :chuckle:

Naaaa, do what you want.
If you do your self, try doing some of the burger with bacon, instead of beef fat. See how he likes it. I know i that is the only way i do my burger, bacon or pork fat. I perfer bacon ends and pieces, they offer more fat with a bit of meet with it.

If your son wants to grind up his deer in burger, then grind it..Or make a deal with him,,the 1st one gets cut up normally, and the 2nd one gets ground..

gasman,,good idea on the bacon..Just how much do you put into you deer??

I like my burger lean. Sence bacon contains meat, i normally go 10% bacon ends and pieces. Cash and carry sells it for cheap and it gives it a little bit of a  ;)

Part of me wants to say 'wrong'. Other part of me says.. Well, it's his deer. Do what he wants.  (If its your deer, do what you want.)

I'll scrape the ribs to get more burger meat, but the choice cuts are still cut on all mine and my boys deer. Not so many roasts.. They're great, but we do like lean venison burger too. Depends on the animal. If it's a small doe, then filleting backstraps might be worth it, the rest to burger. On a big buck.. Gotta have straps and tenderloin, steaks/chops.. And still get a bunch of burger.

I wouldn't say it wrong......I would get mine all cut into round steak if I could.  :chuckle: But I also like all the cuts and grind.

If he's going to eat it, then no, it's not wrong at all.

It's his deer and he can grind if he wants to...grind if he wants to.  (Good Lord, that's dumb.)
