Did you can it yourself?  The salmon I have canned previously held up just fine for a couple years.  I usually cycle through it By then.  Just need to be sure your seal is good.  I have enjoyed my canned salmon plain, or canned with Jalapeno, or Smoked and canned, and also kippered and canned.  All are excellent table fare.  The plain makes great sandwiches.  The other three are good with cream cheese and crackers...

it was canned by an elderly aunt 15 years ago and she claims its fine. I on the other hand am skepitcal

Listen for a vacuum sound when you open it.  If it kept it's seal, there a chance.  I too would be a bit cautious.

I remember when I was a kid we were given an apricot pie by an elderly lady from church.  I can remember digging in, it was great.  I then began to notice little brown specks in the pie.  Ants!  She couldn't see all the ants that were on her apricots in her back yard and cooked them in the pie!  I never puked my guts out like that since.  I hate apricots and I won't eat anything by anyone over 80 or who anyone who can't drive over 35mph, whichever comes first.

Jon, in theory, canned goods will last indefinitely. If there is a vacuum still present, then no bacteriological action has taken place and you should be good to go. Make sure the lid is sucked down and not bulged up slighlty. Canning theoretically kills all bacteria and removes all oxygen from the container, so no biological degradation can occur.

Lid down, vacuum present, looks good, smells good, give it a try.
