as far as the points go. i love the garpoons but they are kinda a pain to re-lock everytime. try the innerloc points they have a wire point and a 2-3 blade grapple that is the best point i have ever shot. i have shot them all.
the rest you are referring to is the muzzy fish hook a very good rest that i shoot myself. all my client bows and other bows have the ams roller rest. very simple easy to use rest. the reason i do not have the fish hook's on them is because there is a little more of a chance to have the line get caught on the hook if you are not watching what you are doing. very solid rest i think i have 6 of them to the 1 muzzy.
my platform is 26" tall i know guys that have 5' tall platforms. i would say minimum would be 20" max would be 35" depending on the boat. if you go to the gallery pages on backwater and extreme you will see lots of pics to get examples from. also go to ams and look at all their pics. they have a whole area of just boat setups.
the jaguar is a good bow for the money but they are known for a lot of handshock and vibration. you can tone this down with the limbsavers and a grip wrap as well.
i also like the ams slides better then the rings myself. both work but have had a little better luck with the slides.
