Jerky question
« on: December 27, 2010, 10:15:14 AM »
Have a quick question for you guys that do alot of jerky.  My wife bought me a digital electric smoker for Christmas, what temp do you guys set the thermostat for, and how long do you cook/smoke for?  Thanks.  I will be doing whole muscle jerky strips that are 1/4" thick.

Not sure what the temp range is on your smoker I start my jerky at 140 with no smoke for an hour then i add a pan of chips then let go for 2-3 hours at 140 then i bump the smoker up to 160 and finish the jerky at this temp jerky is done when it reaches the texture that you like your jerky should be done 4-6 hours maybe longer depends on outside temps too good luck
happyness is a full smoker
