Deer Sausage done wrong?UPDATE

I got my deer sausage back from a butcher that i've taken most of my game to for a couple years now, so far he's done really good. I got some peppercorn deer sausage done this year and i open some up...when i cut it into slices it was crumbly and i couldn't even hardly eat it. The taste was fine, but it might have been alittle dry...not the kind of sausage i'm used to. I don't know if i should call the butcher on monday and complain or just deal with it. It's not cheap to get it processed but i don't want to be rude? What should i do?

UPDATE: Called yesterday left a message, owner called back and i told him what the issue was...he was glad to hear my feedback and said he'd be sure to let his smoker guy know. We usually take a deer to him every year if not 2 deer sometimes and he said he'd be sure to note it down for next year since we'll more than likely go to him. Hopefully that means a substantial discount.......

For how much a guy pays for it- I would complain. You probably will not get anything back but a good butcher will try and make some sort of ammends. Besides- it lets them know if they have a bad employee if that is the case.

They must have had on to high of heat, or in for to long. Its spendy stuff to get made, i would talk to them about it. If its a good shop then there should not be a problem. If its not to good of shop, start looking for a new place to take your stuff. The good ones like feedback and work hard to make things right. The bad ones get pissed and will let you know it, now or later :yike:

If you paid for it and it was not to your standards, then yes you should call. I dont think complaining is the right word, but I would give him some feedback.

I agree. Let them know.......and start buying the equipment to do it yourself next year.

Could be many issues: Smoked too hot/long, not enough fat content, no meat binder. Either way you should contact the butcher.

I made a mistake once freezing some without wrapping it.  Dries it up very quickly if not properly sealed when frozen.

I'd say something also. Again, a good shop will try to make amends if their finished product is not up to their customers satisfaction. Even the BEST shops around will make a mistake every once in a while. The good ones take pride in their product and will do what it takes to make the customer happy.

I make my own (I have a batch in the smoker as I type) and agree....not enough binder/cure, cooked too long or on too high of heat.

Im glad someone brought this up. I had the same thing happen to me a few weeks ago. My 30 pounds of snack sticks have no flavor and there suppose to be jalapeno flavor. Should i call and let th butcher know about this?

You paid of it so you should have a say in it if you like it or not. No need to be rude, the butcher im sure did not do this on purpose. But you should let him know how it was and give him your feedback.
