More snack sticks

Used the new grinder which made short work of these.  Tried a jalapeno mix with hi temp jalapeno cheese.  Alot more flavor than my last spicy teryaki ones.  Still have to seal them up.  Just waiting for my bbb kit to arrive....

I was at Wholesale Spors yesterday and they had 5 or 6 box's of BBB.

Where did you get  the high temp jalapeno cheese?

Michlitch in spokane.  Personally I thought 1lb of cheese looked like an awful lot for 10lbs but looking at it now I could probably have used more.

Looks really good.   Check at Michlich's for the BBB mix.  They make their own and have a honey bacon mix that I used.  It is really good-less salty.

The taste is actually really good.  First batch was over done for me(probably good for normal) but 2nd batch is awesome.  I made an additional  2 lbs of sticks for friends that think they can handle heat, should be interesting.

Well I bought a kit from them.  Come to find out it's a wet brine so I ordered from hi country.

The wet brine is for the ham mix they have.  Really good and easy.  See Christmas Ham under recipes.  The bacon mix (to the left as you look on the rack) is a dry rub that you add honey to.  It's great.  I have pics of that too.

Yeah I know.  After I found out it was a wet brine I gave them a call.  They told me about the honey dry cure but I'm not a huge fan of sweet bacon.  Guess it depends on who you talk to in there.  2 girls didn't know what buckboard bacon was.  I'll give hi mountain a shot, if I don't like it then I'll head to michlitch.  If I don't like them, I'll go to costco.

Says in the directions that you don't have to add the honey and also says that the dry mix and the brine are the same, so I'd try the brine as a dry rub and add what you want...Pepper?

Not in my instructions.  Plain and simple for a brine cure.  I'll hold on to it for a ham later on down the road
