Eating Ringnecks
« on: January 26, 2011, 04:15:58 PM »
Typically all my divers end up as pepperoni or sausage, but this year I've bagged so many more ringnecks than before I've done a little googling.  It seems that most folks consider them really good table fare.   I'm not looking for the "soak in buttermilk...", etc, just curious what your experience has been with ringies.  Thanks!

Ringnecks eat great; at least the ones I shot off the eastside of the state.  I just grill em like a steak.  Awesome.

Ringnecks are very good. not quite a teal or mallard but I'd compare them to wigeon no doubt.

They taste like any duck to me, not really any different than a mallard

Try frying them with butter, cracked pepper and dired jalapeno flakes. Cook it rare.

They are very good to eat and yes, an overnight soak in buttermilk removes the strong taste on any game. The other trick on any duck breast is to fry or grill it rare to medium rare like a steak. I like my roasted ducks a bit rare, as well. Cook ducks well done and you get tough liver. :twocents:
