Had some fat browns and a rainbow leftover from fall.  Butterflied them, used hi mountain brine for almost 24 hours.  Used alder and smoked real low all day.  Every once in awhile I have a brain fart and don't coat skin with olive oil, this was one of those times.  Tastes just as good but twice as ugly.

I like it alot.  I added some brown sugar for a sweeter flavor on 2 fillets but they were all awesome.
