Anything electric, ya need extra fuses or relays for your junction box. Also consider installing a water filtering system W/removable filters. Ya never can trust the local water and travelers sickness ruines the whole trip. If your going for a good couple weeks, you can get a chest freezer installed too. They require more 110vt energy usage but you can pack more meats and stuff, so you don't have to restock on the local economy. Be carefull to check the operation of the freezer several times a day, just to make sure it isn't over loading your junction box. Basically anything electrical that you add on, be sure your matching up your system load limits with the operational demand those gadgets will place on your camper.
