Blackened catfish recipe needed

Anybody got a recipe for blackened catfish?

Pretty straight forward one for you.

Buy some Old Bay Blackening seasoning.
Get some buttermilk.
Get some catfish.
Get some peanut oil.

I like to soak the filets in buttermilk for a bit. Pat them a little dry but don't rinse them off. Coat with blackening, fry it up in an inch or two of hot oil.

for Blackened It requires a very hot skillet (cook  outside if possible-----Lots of smoke). Use H20's blackening seasoning, but dont fry in oil, just the seasoned fillet then place directly on a heavy "HOT" cast iron. About 2 min. per side should do it.
I have purchases blackening spices, but have never made my own. There are google recipes for homeade however.
If you do this inside, unplug the smoke detectors :chuckle:

Nope, gotta be done in oil. Like a blackened fried catfish. Don't listen to anyone else. I obvoiusly know all there is to know.

However, I do agree, do it outside or open all the windows and take your batteries out of the smoke detectors.

I coat the fillets with Emeril's spice.  A very thin film of oil in in a very hot cast iron pan for frying.  Use an oil with a high smoke point like grape seed oil or equivalent.  And yes, do this outside.

I use the Cajuns choice blackening seasoning on my halibut. Like said before I do mine outside ( learned my lesson the first time doing it inside) on the bbq on smoking hot cast iron skillet. I do not use oil either.

I get the ol cast iron hot,no real hot,no hotter than that,I brush the thin fillet with butter both sides the use then cajun choice heavy on the fillet both sides.drop in the pan and do not I repeat do not inhale that smoke,bad juju...there should be white smoke ..and will be..remember its called blackend,turn after a couple of minutes and do the same...ummm ummm
