I picked up the meat at Owen's, sorry for the delay in re-posting my thoughts.  At first, I was thinking the meat I recieved was a bit light. Than I compared it with the 1/4 cow my sister just purchased and now I have changed my mind.  The meat cutter spoke with me prior to cutting my buffalo and did what I asked.  We have eaten some and the cuts were done well.  My experiance was positive and I would take my big animals to them again.  (I cut my own deer.)

For what its worth, I will drive from Wenatchee to CJ's Custom meats in Wapato 509-877-2227. best I have had. its a bit of a wait but very happy with the end product.   :twocents:

I like Owens. Just to far to drive. Now I go to hang em high in republic. Terry does a great job and a good guy to boot. :tup:

I do my own processing but I buy spices and casings from Olson's meats and smokehouse in Enumclaw, Wa.  They are great. All kinds of awards for their products.

I've taken a deer to Nile valley meats and they did a great job and quick turn around. Would love to cut up my own but don't have time and being early season archery can't let it hang.

Terry will also make sausage and pepperoni from your game (as well as do other 'smoked' meats).  Lastly, Terry does taxidermy work under his side business which is called: "The Body Shop". I have taken several deer to Eastern Oregon Mobile Slaughter in Hermiston, OR a bit of a drive but worth it to me. http://easternoregonmobileslaughter.com/
I have even called them at home and they came in about 30 min to take me deer.

Do any cutters around here vacuum seal the meat? When we hunt in Buffalo, Wy. we use Bighorn meats to cut our deer and antelope and they Vac. seal and  it's great.

Yes sir!  I use them for sausage.  I prefer Stewarts in McKenna for summer sausage and jerky though.  I have a freezer full of elk now, including jerky and summer sausage, and will take a whole deer to Farmer Georges for Italian sausage.  Will probably gift my second deer this year.

Regarding Northwest Sausage and Deli in Centralia, they don't do butchering only game meat processing.  If you bring in the meat already cut they'll grind and process but not work with a carcass.
You'll never get a Big'un if you keep shooting Little'un's.
