Bunch of youtube videos on how to serve. It's pretty easy. I bought the Bohning serving kit at Cabelas. Note to all you Mathews Z7 owners...the kit comes with the string separater...but it runs into the roller guide and is pretty much useless. I cut a couple of 3/4 inch diameter pegs about 5 inches long and notched the ends with a jigsaw and smoothed the edges to hold your strings apart. Worked great. The kit came with a string spreader, that I did not have to put my bow in a press to separate the string to start the serving.

Could you fold the serving and wrap the tail up and back down on the outside of the string? Sorry for this being off topic

You can, but it is really easy to split your string and just slide it in there. Makes it easier, you don't have to old the sting.
