I am looking for a good butcher that is willing to make peperoroni sticks out of pheasant. Would be great if they could debone them also.
I am in the puget sound area

You better have a lot of pheasant if you want a processor to make pep's out of the birds. All of them I know want at least 20#'s of meat after de-boning to make a batch. If you do it your self you can do a smaller batch. Anyways good luck...
