Here's my fav way to eat wild duck:
~ soak breasts in saltwater over night to draw out the blood and float any feathers stuck in the meat.
~cut breasts into chunks
~ marinade with light soy sauce, chinese five spice, garlic and olive oil over night
~drain and roll in flour
~deep fry in olive oil
~ENJOY!

That sounds delicous. I'll have to try that one someday.

my favorit way is just to get some joneys seasoning, pepper wrapped in bacon on the pan  :chuckle:

Or if they're big mallard breasts or goose...gotta love big breasts  :chuckle:

~  Wrap in Trader Joe's apple smoked bacon , tooth pick it and grill very rare on the bbq.   It will taste like tenderloin.

Key to kooking all waterfowl is rare as possible or it will be shoe leather.

 Congratulations. Don't overcook or it will dry out. Thats not good. Soak it in a bowl of salted water overnight and change water a couple of times too if you want. Fry rare in olive oil w, a little bit of pepper and enjoy.

With mallards soak in salt water for 24 to 48 hours, tenderize the breasts, marinade in italian dressing for 24 hours, bbq but do not over cook, eat it as rare as you like it.
