Are summer sausage casings large enough to hand stuff?

they are big enough to stuff by hand but it will be a PIA use the stuffer attachment for the grinder

  yeah you can but it is a real pain. I have a kit that I use to stuff them that I don't have to run threw the grinder. So I do all of mine " which is 400+lbs" a year by hand.

My comments all contain the word fisting in them.. so I agree with pianoman...

Not too hard. I've done it easily with a juice jug top and piece of dowel. Worked good for a small batch, that was ground earlier and wasn't worth getting the grinder dirty. The homemade tools were easier than hand stuffing the casing, but it can be done.
