Ive eaten mule deer from just about every eco system in the state, and can say my experience is they are not all created equal. Flavor varies greatly based on regional preferred forage.
Same goes for white tails.....but in general, whities seem to me, to be considerably more mild. Up here in the n.e. corner, they are very similar to the free range beef which eat just about all the same browse. My opinion is white tails up here are 5 star table fare.
