SMOKED CLAMS AND OYSTERS

So last weekend I ran up the canal and dug some clams and picked some oysters on the Duckabush, on the way back I stopped in at the Hamma Hamma store to check out what they had, kind of slim pickings but I grabbed some garlic and black pepper smoked oysters along with a quart of Olympic mountain ice cream (huckleberry cheesecake...wow). Anyways the oysters were all gone by the time I got home and it got me thinking about making some myself since they were so darn good.

Any one have any good smoked oyster brine recipes?

While I'm at it, how about smoked razorclam recipes? I use my standard smoked salmon recipe only I cut the salt in half, the little buggers seem to absorb the salt way too much. Smoked razor clams are awesome if you've never had them.

I don't brine them as they get WAY too salty.  Just strain them real good and mix in a little bit of Johnny's and garlic salt.  It doesn't take much.  I put parchment paper (not wax) on my smoker racks and then spray the parchment with spray cooking oil.  Put the oysters on them and smoke until they are dry.  Flip them over and smoke the other side until dry.  I then vacuum seal them for the freezer.  These are really tasty.

For smoked clams, try ICEMAN's recipe for canning them.  That is one of the best recipes I have ever tried.  You can find a thread on this in the recipes/butchering section.

I don't know a good brine but my mouth is watering thinking about smoked oysters.

That makes sense about not brining them, I wonder how you do the teryaki kind then?

I have smoked and canned razorclams before, I will have to take a look at icemans recipe for it though. They are awesome just smoked until they are like jerky. First time I had one was on an icy cold day on the river steelhead fishing... a guy offered me a smoked clam in a little baggy, looked just like jerky. Pretty cool way to use them up

Did you really?  If so I am honored. I have a few jars left...need to thaw a big ol bag of frozen clams and can them up!  Thinking of tossing some garlic at the next batch too...

I sure did.  My wife does not share the passion I have for canned clams and oysters.  She left me home alone one day a couple weeks ago and I polished off the last can of clams and the last can of smoked oysters.  The cats love the juice from the clams too.

Well a buddy and I took the girls out last weekend, had plans to smoke up a bunch of oysters but ended up eating every one of them that night. This weekend is razor clamming... guess I will just have to work on perfecting those until I get another good evening tide for oysters
