Cant wait! I LOVE Corn beef & Cabbage!  :drool: St. Patricks day is the only day its cool to be male with slightly red hair!  :chuckle:

I used to call a friend that has passed now on St Paddy's day.He was very proud of being Irish.I would call while he was at work on his home phone, and leave a message on how the danish{me} were so good looking,and didn't blow goat bags or play flutes  :chuckle: Soon as he got home my ears were ringing and then the phone would ring...In person he would always get all red faced and pissed when I would mention this... :chuckle: sure miss him..

ST Paddies day is pretty big here (Bogota Colombia). "The Pub" will be filled (not even standing room) before 2:00 PM with people in all sorts of wild St Paddies hats and shirts. Nor sure if one of them is Irish, but they will enjoy the Irish party anyway.

I spent the first 13 years of my life in a Boston suburb. St. Patty's Day was pretty wild. Always had a New England boiled dinner - corned beef, potatoes, carrots, and cabbage, all in the crockpot.  I now know better and cook my corned beef in a pressure cooker for an hour. Don't cheap out; but the rounds. Best yield, most tender cut. Happy St. Patty's Day on Saturday from a Scot to all of my "Mick" friends from here and elsewhere. Like we need an excuse to drink!

My wifes family is Irish. I LOVE ST PATTIES DAY! She makes Corned beef and cabbage, colecannon, and i used to drink beer but now have to stick to whiskey... And boy do i like that!

You all know why God invented Whiskey don't you?

Loki, I have corned venison and elk but it tends to turn out a little on the dry side.  I only do beef now.  I "technically" don't use the "corning" process as that cures with rock salt.  I use a brine with Prague powder as the cure.  The brine also has some salt, sugar and pickling spice.  I don't have the recipe with me but it would be pretty easy to find one on the net.  I use the recipe out of Rytek Kutas's book Great Sausage Making Recipes and Meat Curing.

I have that book and am going to look up that cure NRA... cause I have some moose roasts that may be ok... though might get a little dry like you said...?

I love corned beef and cabbage... with some potatoes... and maybe some onion too!
