Cheese takes smoke fast and well, it seems to me that the cheaper cheeses take more of it and that it takes much longer for them to mellow.I did a batch of Tillamook white cheddar that was unbelievably good in only a week and just got progressively better after that. I'm working on my last batch now that I did just before Thanksgiving, it was all store brand cheese and I would say that it is just now getting pretty good. I smoked this batch for 1.5 hours just as I did the one before it.So if it tastes like campfire the first time you try it just keep it in the fridge and try again every couple of weeks.Looks really good btw and good choice on the chips.
Couldn't take it anymore so I had to try some cheese last night. tasted a little like campfire but once you got past the crust it's not so bad. That bag didn't last long at all.
