Bobcat recipe
« on: October 26, 2019, 05:48:19 PM »
So I was told bobcat is very good but I was told to brine it first for 12 too 18 hrs then cook it up . So I was wondering if you guys have any brine preferences or another possible way to cook it?

I would guess it would taste a bit like cougar, yum. But being smaller, slow cooking and then pulling the meat for stews or tacos or something like that would probably be good.

Ive eaten it before, mtn lion is more of a white meat like chicken or pork but bobcat is red meat and too me a couple things stood out, it was super greasy and completely lacked flavor.

"Eye of newt, and toe of frog,
Wool of bat, and tongue of dog,

Lizard's leg, and howlet's wing,--
For a charm of powerful trouble,
Like a hell-broth boil and bubble."

Tagging. I have a hind quarter from JonathanS and my plan is to brine, then good seasoning, sear, and then cover with stock in my Dutch oven and into the oven at 270° or so for 5hrs  :dunno:
