Don't get too hung up on fat. Bacon fat and real butter are way better for you than Crisco and margarine. I bet the overly fat folks with the health issues were more 'victims' of bad carbs. Overly processed food. Refined sugar and high fructose corn syrup (found in soda, ketchup, bbq sauces, sports drinks, juices, etc etc). White bread and other junk foods. ...
while trans fats are horrible, the body does need some saturated animal fat. monounsaturated fats tend to be the healthiest which is why the bulk of my added fat is usually extra virgin olive oil.
