I actually broke all the leg segments apart before splitting. Easier to work with but screws up the presentation. If you go this route, be careful that you don't pull the meat out of the shell when separating segments. Pinch the meat so it stays in the shell and the cartilage comes free. Start at the end and work towards the body, then trim any remaining cartilage. The heating/steaming suggestion above is just going to warm them up, it's important that you don't "cook" them. Enjoy.
