So.......    should I thaw my crab tonight before steaming tomorrow?

Sorry....   Only ever done fresh crab on the beach.....  Want to get it right!

That's what I would do, might be hard to split the shells frozen?
I would also suggest a clean glove of sorts on the hand when splitting the shells. I actually broke all the leg segments apart before splitting.
Easier to work with but screws up the presentation. If you go this route, be careful that you don't pull the meat out of the shell when separating segments. Pinch the meat so it stays in the shell and the cartilage comes free. Start at the end and work towards the body, then trim any remaining cartilage. The heating/steaming suggestion above is just going to warm them up, it's important that you don't "cook" them. Enjoy.

@Dan-o I asked @skillet how best to warm the crab since I didn't really have a way to steam them.  He suggested the oven, on a cookie sheet, at 475 degrees, for 8 minutes.  I did that and they turned out great.  I did defrost mine overnight, on a cookie sheet, as they drip/drain everywhere.  I also used kitchen shears and split all the legs before heating.  Knowing that I know now, I would probably split them in 2 different places on each leg as some of the less strong folks had some issues getting them apart.  Hope yours turn our great!

Feast of the Seven (Two) Fishes tonight.   Traditionally in Italy there are a full feast of seafood in Sicily.


Tonight we made lemon-thyme Parmesan crusted weathervane scallops and panko-Parmesan crusted rockfish.  Plated with a garlic pesto fettuccine that I made from scratch.  There were no leftovers.  Thanks Skillet!

Chris is my Hunt-Wa MVP of the year.  Thanks for doing this.  Sorry I couldn't meet up with you yesterday, other things got in the way again.  The crab legs were amazing last night.  Only my third non-liquid meal in the last 2 weeks and boy what a way to do it.  Those will not last long.
