Ya that  :tup:  I don't eat anything from inside of critters, never have really. I know a lot of cats that eat liver, heart, tongue.... sure, I can see that but not those other "things" of which you speaketh of... that's just nasty.  :chuckle:

My dad and his gang eat them.  Not for me though.  I save the hearts and eat them in a variety of ways.  Used to eat liver until one fateful day in Northern WI......  Had neighbors who leased and hunted the farm next to my property in MO who would scavenge our gut piles for them.  I thought that was a little odd.  My dad has told me about the Hmongs (sp?) that would follow drag paths in the snow back to gut piles and raid them.  To each his own.

I've thought about that, many guys don't save the heart and if it's from a fresh kill I would gladly take it.

So I think they are pretty awesome when treated right.
First it helps to partially freeze the testicles. Throw in the freezer for about 20-30 min prior to handling.
Remove the outer membrane. Then slice into rounds, if it starts to become hard to handle throw back in the freezer. (it reminds me of fat that wants to liquify because of the heat of your hand).

After its firm and cut into rounds dread in egg wash and panko. Or egg wash and flour/corn meal dredge if you're going for something more southern.

Then fry at 350 for a few min.

Tongue is awesome, better than heart in my book.  Elk have a big enough tongue to make it worthwhile, deer not so much.

It has to be prepared and cooked right, probably the most demanding preparation of all meat.  There is really only one right way to do it.

I've eaten kidney at a few really nice restaurants. I wasn't a fan. I figured I'm humble enough to know I'm not as good of a cook as they are. So it wasn't a matter of technique. Just not a fan.

Yes.  Not nearly as good as liver or heart, but not terrible.

Fry in dredge in flour, fry in butter at camp the night of the harvest.  Most guys will gag, but they eat with their brains and not with their tongues.

When me and a friend hunted British Columbia for elk our guides saved them and cooked them for us. breaded and fried and they were surprisingly good  :twocents:
