Buckboard bacon is on the smoker this evening! Eggs Florentine in the morning with fresh picked (and boiled) stinging nettles instead of spinach. Exactly a year ago I had the same breakfast.

Just a once a year thing for me. An eggs Florentine meal for breakfast and a side of nettle greens at dinner (usually with a ribeye steak). For the breakfast meal I’ll pick a bunch, boil and drain, sauté in butter then stack onto the muffin. For the dinner, pick a bunch, sauté in butter, then serve on the side with slivered sweet onion and diced buckboard bacon. Salt and pepper. Here’s a pic of last years breakfast and dinner.

Well krap....happened again (sideways/upside down pics). Tried to preview beforehand. Didn’t workout. Gotta figure this photo posting out as I’m about tired of upside down and sideways pics!! Anyway, grub was good.

We do the nettles every spring too. Nettle tea and nettle pesto are big hits here.

Not very long at all. Pretty much a blanching. 30 seconds.
