Got a pork belly at Costco for $3.99/lb. Chunked off a piece and cut into 1.5" cubes. Seasond with salt, pepper, garlic and onion powder , paprika and brown sugar. Put on smoker at 325 for 75 minutes. Put them in a pan with butter and sweet/zesty bbq sauce for another 75 mins. Fat rendered out perfectly. My only problem now is figuring out how to just cook for just wife and I.turned out really good

We have been doing a very similar process and recipe. It turns out great and is absolutely delicious. It also freezes very well. We vacuum seal it in 1lb packs and freeze it for quick easy meals down the road. Open it up, throw it in a cast iron pan to warm it taste equally as good as when it was fresh off the smoker.
