Is there a particular reason why you want the RAW capability? Unless you have good photo editing software and know how to use it, that would be the only reason to shoot in RAW. I know pros who just strictly shoot in jpeg with high end cameras cause it works for their end product. You can achieve great results with the jpeg format and blow it up to poster size depending on pixel rating of course (most cameras today have plenty of pixels to exceed 8x10 in sharpness). Choosing the best camera depends on what your photography goals are. Your cannon will probably fit the bill just fine if you pick up some decent lenses for it. Unless you want to get into fancy action photography, the auto mode does a good job most of the time, until you can learn the rest of the features of the camera. Documenting wildlife by snapping a photo is one thing, purposely pursuing wildlife with photography equipment is totally something else. As for the video capability, the slr's are pretty spending to have both. I've seen some pretty nice still photos taken from video, so you might just consider packin a video cam.
