Fresh ones smoke up ok.  A little soft.   Good to do em fresh.  I'll never forget the first chum I stuck in the freezer.  Now that was gross.

Got skunked duck hunting this morning so I headed to the river. Limited in about ten minutes with two of the biggest chums (chun) I have ever seen/caught. Ill try and post a picture later if I can figure it out.

I take it y'all ain't never tried deep fried "Salmon nuggets" or "Steelhead candy"  :drool:
I am a Southerner and as you know we love anything fried!!!! :yike:
I think fresh Chum are the best for fryin due to their high fat content (as with Springer). :tung:
I cut them into 1" chunks, run em through buttermilk with Johnnys seafood seasoning & lemon pepper then into the bisquick & then 8 mins in the fry daddy. Served hot with (tarter sauce mixed with ketchup) and hush puppies!!!! :tup:
