The key is that an elk/deer is already at 101-102 and that just starts to rise as soon as the animal quits pumping blood.
You have to stop that temperature increase.
It is the increase, or constant same temp that allows the bacteria to grow.
Once the temp is on the way down, then you have more time.
Get the hide off and the large portions of meat (hams) open and cooling.
Hanging in the shade in breathable bags, near a creek.  :tup:
On your back and out to truck.
In cooler, or cold storage.

Get meat in game bags as quick as possible and then hangingout over creek in the shade if possible. We have hung meat in this manner for up to a week in Sept and never lost an ounce of meat to spoilage. Meat has always been excellent eating as well. I only really worry about getting it on ice if it's really hot and not getting down into the thirtys at night.

When storing boned meat  don't have big clumps of meat. I tie the game bags into small sections . I have dunked them in creeks to cool down just dry it off before you store in meat locker.

Thank you guys for all the tips and tricks.  Every hunter has a little macgyver in 'em.  Now lets get them elk on the ground!!! Been practicing my elk calls in the car.  People in traffic give me the weirdest looks !!!!

I would suggest hanging meat instead of laying meat on poles. Pine martins can do some serious damage to game bags over night, happened a time or two.

We quarter our animals let it be deer, bear, elk in september and put it in coolers asap. We bring extra coolers just for meat. If one of the wives is up in camp for the weekend as soon as I shoot something I call camp and tell them to go to the gas station which is about 20 miles and get ice. This year is gona be nice as I will have my 8x12 walk in cooler ready!

and if there is no ready creek access....
1) Bone it out ASAP.  Don't leave anything bigger than a football.
2) Build two raised stick platforms. One in the open, one in the shade.  Supper easy.  Criss-crossed branches, 3 layers high.
3) At night distribute the meat on game bags "in the open." You want the best view of the night sky as possible.  Trivia:  The clear night sky is a -100C radiation heats sink.
4) In the morning move the meat to the shaded stick bed, one big lump best you can, covered in two of the super light aluminum space blankets.  Makes a nice little thermos.
5) Repeat each night.

I've done this up to 3 cycles in September when Yakima temps were 95F with no issues.  Meat remains cold to the touch at the end of the day.

All that said, IMHO, the first 60 minutes are the most important.  Get the meat off the bone ASAP.

I am already having nightmares about my bow shooting 50 FPS this September in the woods and now I'll have nightmares about 105 degree temps when I get a bull down  :yike:

It's all been said.  I am sure I will eventually lose some meat due to the heat but I will be busting my tail and doing the utmost to take care of it.  If I lose some meat in this situation, I will not lose sleep over it.

Kindly do not attempt to cloud the issue with too many facts.

Any of you wet siders that come over close to Walla Walla that have an archery tag for deer or elk are welcome to store your meat for a night or two in my cooler. At least get a good pre cooling done before you take the trip back over the mountain. The only catch is that I have people who bought in to help me build it and their meat has priority. Lucky for you though, most of them rifle hunt. Anyway, offer is on the table would hate to see somebody loose meat when I have the ability to help. Keep my number 509- three 0 one - fifty one thirty six.
