Backwoods Sausage Seasoning - Anyone Try It?

The package looked nice so I got some breakfast maple sausage seasoning to try.  Smelled funky like fennel or something but I figured maybe mixed it would grow into a nice maple flavored sausage.  Nope - same funky taste as the funky smell.  wtheck ?  Anyone have luck with their seasonings?  I have some sweet italian to try I hope its better.

I wonder if you got a miss labeled one I used it to make my breakfast sausage. It smells and tastes like maple.

That's the one that we use and it always turns out great!  Like said above, I bet yours was mislabeled.

So...............
This might sound kinda d*ckish but I never understood pre packaged seasonings. They are just ripping you off and over charging. Make your own spice blend.

Here is what I do for breakfast sausage.

3 lbs venison
1 lb pork shoulder
8 oz fatback
2 tbs black pepper
1 tbs sage
2 teaspoons ground ginger
1 teaspoon red pepper flakes
1/2 teaspoon ground nutmeg
1/2 cup maple syrup
2.5 tbs sea salt

Go find some B grade maple syrup. (I kinda lucked out in that department, I have some distant family that has a maple farm in Michigan and get a gallon every year, definitely not B grade).

This is set up for when we are grinding our meats. However you can start with ground venison and pork, just cut in a bit of diced fatback.

You can stuff it into sheep casings if you want. Or just leave ground and make into patties when your ready for breakfast. You can even leave it ground and grab some plastic wrap and roll it and twist it off to keep your meat in a tube shape kinda Jimmy Deal style and all. Just saying, looks like a pro did it.

And the best test is after you are done mixing your meat and seasonings together, grab about 1 teaspoon of meat and roll it into a ball and throw it in the microwave for 30-45 seconds. Let is set for a sec and taste. If it tastes great then your done. If not adjust your seasonings.
